Healthy Tuna Salad Stuffed Avocado - an easy gluten free recipe perfect for lunch.
INGREDIENTS
1 5 oz. can white albacore tuna in water, drained
1 tablespoon avocado oil mayo
1 tablespoon stone ground mustard
1 tablespoon finely diced red onion
1 small dill pickle finely diced
⅛ teaspoon garlic powder
⅛ teaspoon smoked paprika
⅛ teaspoon black pepper
1 avocado
INSTRUCTIONS
To a small bowl add tuna, mayo, mustard, red onion, pickle, garlic powder, smoked paprika, and black pepper. Using a fork, break up the tuna a little bit and then mix all the ingredients together.
Add mixture to each avocado halve and serve.
